Coyote Grille Recipe: Juan’s Pepino Gallo

Juan’s Pepino Gallo is a fresh and delicious accompaniment to seafood, steak, chicken or just to eat on its own!  Summer is the best time to make Pepino Gallo with the ripe summer vegetables from your local farmers market.  You can try it this month at Coyote Grille served with our Carne Asada, or just make it on your own with this recipe from Juan!!

PEPINO GALLO

1 cucumber, diced
1 cup corn
1/2 red onion, diced
1 large tomato, diced
1/2 bunch cilantro
1 jalapeño,finely chopped
Juice of 2 limes
Salt and Pepper to taste

Mix it all together and enjoy!!!
