Juan’s Ceviche Recipe

1lb Small shrimp peeled and deveined

1 cup lime juice (fresh limes only!)
1 cup julliened red onion
1 cup jalapeno chopped
1 cup chopped cilantro
1 cup julienned ripe mango
1 cup diced roma tomato
1/2 cup ketchup
2 tsp worchestershire sauce
Salt and Pepper to taste

In large pot bring 4qt of water to boil. Add shrimp and cook for 1 minute. Remove shrimp and place into a bowl of ice water to stop the cooking. Cut the shrimp into 1 inch pieces, place into bowl with lime juice and refrigerate for 1/2 hour. Add in remaining ingredients, stir and enjoy!
